Zucchini, Courgette, Italian Squash.....

Whatever takes your fancy, really!

We (I) have been eating zucchini by the mile, and have managed to chomp my way through a whole supermarket bag full of them in two weeks!

Aside from the Chocolate Zucchini Cakes and Muffins, we have had them grilled with tomato and cheese, panfried with garlic in butter, chargrilled with aubergine and capsicum, grated in salads and wraps, etc.

One of my fave recipes was given to me by Aunty Helen in Titahi Bay - Zucchini and Mint Fritters:

Grate 4 zucchini and 50g cheese. Finely chop 4 spring onions and a big handful of mint and toss with grated ingredients through 1/2 cup flour. Whisk 4 eggs and add to the mix with salt and pepper. Leave for at least an hour then drop spoonfuls into a pan and cook until set in the middle.

Yum, yum!!!!!

Catch Phrase For The Day: "F*%# Off!!!!!" - to be screamed into the telephone receiver right before you hang up whenever those parasitic and highly annoying TeleMarketers phone (when you're at your busiest, of course!) - they're the bane of my life!
